The culinary tradition of Liguria covers a wide variety of flavours, and because of its origins is considered the true cuisine of the Mediterranean, with dishes from the land and the sea, wild herbs, grains and extra virgin olive oil as an essential ingredient.

The blend of historic tradition with the excellence of local ingredients is represented by dishes like chestnut flour gnochhi in walnut sauce, pappardelle al pesto with potatoes and green beans, rabbit casserole with olives and pine nuts, and the white and red wines of Val di Vara, like the Vermentino DOC Colli di Luni and local sweets such as the cake made with Sciacchetrà, the delicious sweet wine of the Cinque Terre.

Our passion for authentic flavours and attention to the dietary needs of our guests are recognised with dishes recommended for vegetarians, coeliacs and other special requirements: here you can sample the delights of regional cuisine that respects your nutritional needs. Pasta, bread and desserts are all made in the restaurant using prime ingredients from the hotel’s organic valley surroundings.
